How can I make good dehydrated plums with a dehydrator?

The plums must be immersed in boiling water for 30 seconds and then immediately placed into a bowl filled with cold water to loosen their skins and then can be dehydrated for good quality.

You sure can. That is basically what the prune is (a dehydrated plum). I have found that it is pretty difficult to get the plum dry enough in a reasonable amount of time. My suggestion is to slice the plum into fairly thin pieces before dehydrating.

You'll want to cut up your plums in half or quarters and take out the pit. Drying time will be overnight or 8-12 hours at 135 depending on moisture content. Always wash and dry your fruits before you begin. Another option is a two step process of 2 hours at 145 and then finish at 105.
