How can I make a flaky pie crust?

My crusts are never flaky.

My advice is to cut the shortening into the flour but not too finely - you want to see some pea-sized lumps. Then use ice water and toss the mixture together lightly with a fork. Try to create the dough without mashing in the shortening, then chill before rolling. The expansion of the moisure in the shortening creates the flakes.

Make sure your ingredients are all cold. The butter should be as cold as possible. This will make sure to make your crust flaky and airey.
