How can cool temperatures be used in cooking?

I know they slow the process that destroys nutrients, which is why you keep food in a refrigerator.

There is a method called "shocking" that is often used when blanching vegetables, in which you place the freshly cooked vegetables immediately into an ice water bath; this stops the cooking instantaneously, and thus preserves the natural color, flavor, and most importantly, the nutrition originally present in their raw form.

Cool temperatures can be used when cooking thin pieces of meat or vegetables because it can cook them thoroughly and give them a fresher taste at the same time.
