Yes it can cause inflamed taste buds, but more than likely your taste buds are inflamed because you ate something sour, salty, or you drink or ate something very hot and it burned some of the taste buds. There can be several reasons for inflamed taste buds in your mouth.

Herpes is the virus that causes things such as fever blisters and canker sores and genital lesions. Anywhere this virus invades cells will cause inflammation, this included taste buds.

The herpes virus (Herpes Simplex 1) causes cold sores on and around the lips. A sore or swollen taste bud is usually the result of biting your tongue, which can happen while you sleep.

Usually herpes on the tongue only occurs during initial infection. It is more likely that inflamed taste buds are not caused by herpes but would be caused by geographic tongue or thrush.
