I need to know what to do with new sod and mowing.

The only time you should really bag grass is if it's too long, and will smother the grass after it's cut. Otherwise, you should always leave it lay.

water it for a month of two then mow it when it gets about 6 inches or so. It should stick and grow well.

Mulch the first mow back into the sod. The new lawn needs all the natural nourishment that it can get. New sod is easily damaged with chemical sprays or powders.
