At what temperatures do the different parts of an egg coagulate?

Because it cosists of mostly water, an egg white will coagulate at about 150 degrees F. The yolk proteins take a bit more heat but follow closely at about 158 degrees F. Adding sugar or salt to whatever is created with the eggs can lower or higher the coagulation temperature.

Egg whites coagulate between 145 and 150 degrees Fahrenheit, and the egg egg yolks coagulate between 144 and 150 degrees.
